Baking time! This sunless weather is the perfect moment to try some delicious baked goods. Fun for yourself or for sharing with others.
Baileys cinnamon muffins! a delicious snack for a rainy day. Always a hit. Not too sweet and absolutely yummy! Add a nice cup of coffee, tea or hot choco and you are set. Enough ingredients for a great start of the day!

What do you need?
For the base:
- 300g flour
- 100g granulated sugar
- 100ml oil
- 150 ml milk
- vanilla extract
- 2 eggs
- pinch of salt
- a little bit of baking powder
- 50-75 ml Baileys Irish cream
- Muffin cake pan
- 2 mixing bowls
- ladle
Garnish:
- 50g caster sugar
- 3 tbsp cinnamon
- 2 molten pieces of butter

Instructions
Put the oven on 180 degrees celsius and let it heat up properly. Grab two mixing bowls. Use one bowl for the liquids, the other for the dry mix.
For the dry mix add the flour, sugar, baking powder and salt in one bowl. Mix with the ladle and put it on the side for a minute.

In the second bowl first beat the two eggs for a minute. Just briefly. Add the milk, oil and a bit of vanilla extract and stir. Slowly add the dry mixture into the liquid mixture. Gently stir in between until you get one beautiful semi liquid form.


Be careful: you’re mixture should be a tad on the dry side in order to leave room for the Baileys. If you’re mixture is too liquidy, add a bit of flour.

Now add the Baileys. Your mixture is perfect if it gently drips off the ladle. Not too watery but not too dry either.

Grease your muffin cake pan. You can use either butter or a bakingspray. We used the latter. Grease them well, then fill the shapes 2/3. Leave room for the muffins to rise.

Now put everything in the oven. Baking time is approximately 20-22 minutes depending on your oven. If you like your muffins with a tiny crispy edge then leave them in the oven for 1-2 minutes longer.
Out of the oven
When it’s time get the muffins out of the oven. Gently place them on the counter and use a knife or something small to loosen up the edges from the baking pan. Leave them to cool for 1 minute if you can’t fully loosen them yet. However, don’t leave them standing longer than 4 minutes! Once you get them out of their shapes, set them on a cookie rack to settle for a few minutes.
Garnish


In the meantime melt the butter. Use a pan or heat them up in a mug in the microwave. In a small bowl mix the caster sugar and cinnamon. Use a pastry brush or a little corner of a napkin to rub the liquid butter onto the muffins. Next, you dip the muffins in the sugar cinnamon mixture. Leave them to dry for a minute or two and they are ready to serve.
